My Favorite Food
Ever since I was a little boy, pizza has always had a special place in my heart. From pizza day in the school cafeteria to pizza parties at sleep away camp, there was nothing more exciting than when that cardboard box was opened to reveal a round pie with eight delicious slices waiting to be devoured.

Early on I learned that everybody eats their pizza differently. There are those who fold their slices in half, those who eat their slices with two hands, and those who (dare I say) like to cut their pizza with a fork and knife. Some people soak up the olive oil with a napkin, while others don't mind a greasy slice. Some people like the crust, while others live for that first bite. Some people decorate their slices with spices, while others like it plain.

Nearly any ingredient can be put on pizza. From pepperoni and anchovies to barbecue chicken and pineapple, every pizza pie is like a unique work of art. Every pie is a different shape and size. There are thin crust pies, deep dish pies, and everything in between. There are pies with different cheeses and tomato sauce, or even pies with a completely different base altogether.

Growing up in the suburbs of Washington, DC there weren't so many great options for pizza. Ordering in from Domino's and Pizza Hut was a weekly occurrence. But when I arrived in New York in 2002, I was thrust into an entirely new pizza universe.

Living at an NYU dorm by Washington Square Park, I developed a quick allegiance with my local pizzerias. I could barely walk a block without passing by a shop -- many of them claiming to serve up the best slice in the city. There was Joe's on the corner of Bleecker Street and Carmine Street (which closed it's doors in 2004) where tipsy students, homeless people, and even celebrities made their way to the counter through the wee hours of the morning. I remember eating a slice of pizza with Dave Chappelle one evening after he'd finished up a set at the nearby Comedy Cellar. Joe's served up a good slice,

    Pizza Hut makes different kinds of pizza and presents special offers each day. The product utilizes an assembly line process where the pizza is prepared after passing through various steps. According to Lerner & Lerner (2008), “an assembly line is a manufacturing system of mass production in which a finished product is manufactured in a step-by-step process involving interchangeable parts added in a sequential manner as it moves continuously past an arrangement of workers and machines” (p. 343). The pizza starts with making dough that is usually ready made by machines. The dough is fresh and its ingredients are of high quality; it is made daily to ensure freshness and good quality. Then the dough is placed on a pan and the employee adds the fresh and clean ingredients, vegetables, and toppings according to each customer’s taste. Later, the pizza is put in the oven where an employee will take care of it and make sure it is baked well. Once the pizza is baked well it is served to the customer. Moreover, to ensure customer satisfaction, the employees at Pizza hut are well trained and polite. Each customer is served according to turn; in other words, the customer that comes first is served first.     Although we love our modern-day version pizza pie, where did it all begin? In my research, I found several opinions of the origin, but there is a consensus that this baked goodness is over one thousand years old. Ed Behr of Art of Eating newsletter states, "The written record of the word pizza, in the sense of foccacia, goes back to the Codex Cajetanus of the year 997." And there is speculation that even Plato spoke of pizza in his Republic: "They will provide from their barley and flour from their wheat and kneading and cook these… they (the cakes) will also have relishes – salt… and of olives and cheese; and onions and greens." Although this is probably not the case, it is interesting to imagine one of our great minds of history philosophizing about something so miniscule. Behr continues to suggest that "pizza is an alternation of the Greek word pitta, which was introduced to southern Italy during the Byzantine conquest of the sixth century." Evelyn Slomon, author of The Pizza Book, states, "The name [pizza] comes from a southern Italian corruption of the Latin adjective picea (peechia), which described the black tar-like coating underneath the placenta, a pie made of the finest flours, a topping of cheese mixed with honey, and a seasoning of bay leaves and oil."     Our pizza came out looking like a soggy, colorless, depressing piece of bread. The bread of the pizza was so soggy, it seemed as if the pizza was drenched in water which did not help the taste of the pizza at all.
